10 whole anchovies
2 C Lemon Juice
16 ea Garlic cloves
16 ea Egg yolk
1/2 C Hot sauce
8 C Olive Oil blend
1 C Dijon mustard, smooth
1/2 C red wine vinegar
2 C Parmesan cheese, powder

Directions:
Directions:
Combine all ingredients except for oil and cheese.
If making a 1/2 batch, use robot coupe, if not you must use a 1 or 2gal bucket.
Slowly add oil to emulsify.
Fold parmesan into dressing. Adjust seasonings if needed.
Label and store.
