2 eggs
1 ½ cups tapioca starch
½ cup shredded Parmesan cheese
4.4 oz (half the package) Chihuahua cheese (broken up) or quesadilla cheese
⅓ cup melted butter
⅔ cup milk
1 teaspoon salt

Directions:
Directions:
1. Preheat oven to 350ºF
2. Place 1 egg in the blender.
3. Add the tapioca starch.
4. Add the 2nd egg and cheese
5. Add the melted butter and milk.
6. Add the salt
7. Blend until smooth (you may need to scrape sides of blender to get any tapioca starch not blending in).
8. Scoop or pour into mini-whoopie pie tins
9. Bake for 20 minutes at 350

This leads to a tender crust (similar to what you find at the steak houses). Do not use already shredded Chihuahua cheese, the starch in it alters the recipe.
