Ingredients: 2 pounds boneless skinless chicken cut into cubes if making on stove top (cut into half if cooking in slow cooker) 5 Tbs Cornstarch (3 Tbs if slow cooker) ½ tsp black pepper 1 Tbs canola oil ¼ cup soy sauce 4 Tbs rice wine vinegar 4 Tbs ketchup 2 Tbs sweet chili sauce 2 Tbs brown sugar 2 cloves of garlic minced 1 tsp ginger ¼ tsp red pepper flakes (optional) 1 cup cashews

Directions:Combine cornstarch and pepper in ziplock bag. Add chicken, shake to coat Heat oil in skillet over medium-high heat. Brown chicken until chicken runs clear; (2 mins on each side if cooking in slow cooker, then place in slow cooker) Mix rest of the ingredients, except cashews, in a small bowl. Pour over chicken. Stir and cook until bubbling. Add cashews and cook on med-low for about 5 mins. Serve with white rice. |

Notes: This can be made in a slow cooker. Once you've cooked the chicken add to slow cooker and combine rest of the ingredients; pour over chicken. Cook on low 3-4 hr. If you don't like your cashews on the softer side, add to slow cooker last 30 mins. What's great about this recipe is you can add vegetables is you like: peas broccoli. Double the sauce if you think it needs more.
