1 (3 1/2 pound) cut up chicken or chicken pieces already cut
3 cups buttermilk
2 tsp. Kosher salt
2 tsp. black pepper
2 cups AP flour
Canola or vegetable oil

Directions:
Directions:
Combine chicken and buttermilk in a large nonmetal bowl; cover and chill 8-12 hours.
Drain the chicken, discarding the buttermilk.
Preheat the oven to 350º.
Combine salt and pepper; sprinkle half of the salt mixture over the chicken.
Combine the remaining salt mixture and flour in a large gallon freezer bag and shake to coat.
Repeat procedure with remaining chicken.
Pour oil to depth of 1/4 in a large skillet.
Heat on medium-high until it sizzles.
Fry chicken pieces in 2 batches in hot oil for 5 to 6 minutes on each side or until browned.
Place chicken on a wire rack with a baking pan under it to collect any fat and juices.
Bake for 30 minutes or until clear juice comes out after you test a piece.
The darker meat needs more time to cook so check that one first.

I don’t make this often but when I do everyone really enjoys this dish.
It is great served with homemade baked beans and cole slaw.
