3 c. fresh rhubarb
1 ½ c. sugar
3 tbsp. salt
2 eggs, beaten
1 tbsp. butter
1 never fail pie crust

Directions:
Directions:
Cut rhubarb into ½ inch pieces and put in large mixing bowl. Mix flour, sugar, and salt together and stir into rhubarb. Let stand while you roll out one crust and fit into a 9 inch pie pan. Stir beaten egg into rhubarb mixture and pour into crust. Dot with butter. Make a lattice top crust of strips of dough cut about ½ inch wide. Rosy juice will bubble up through the lattice instead of dripping down in the oven. (Some like a little cinnamon or nutmeg, about a ½ tsp., sprinkled over the rhubarb before the top crust is put on.) Bake 10 minutes at 400º and about 30 minutes longer at 325º. The filling in the center will be bubbling a little when pie is done. Serve hot or cold, plain or with a dollop of vanilla ice cream.
