9 inch baked pie shell
½ c. Watkins lemon flavored dessert mix
½ c. sugar
½ c. water
3 egg yolks, slightly beaten
2 ½ c. water
2 egg whites
dash of cream of tartar

Directions:
Directions:
To make filling: in a medium saucepan combine lemon dessert mix, sugar, and ½ c. water. Add egg yolks to 2 ½ c. water, and stir into the previous mixture. Cook, stirring constantly over medium heat until mixture comes to a full boil and begins to thicken. Remove from heat, cool slightly; pour into baked pie shell. In a separate bowl, beat eggs whites with a mixer on high until standing peaks form. Spread on pie. Return to oven till meringue turns golden brown.
