3 white onions
3 yellow onions
3 red onions
1 1/2 c dry Sherry
6 cans of beef consume
1 can beef broth
2 cubes of butter
1 bay leaf
Sprig of thyme

Final Plating:
Mozzarella
Croutons or French Bread

Directions:
Directions:
Cut up onions. Saute in butter. Add Sherry and let cook down for 30 - 40 minutes.

Add remaining ingredients and simmer for about an hour, with 1 bay leaf and sprig of thyme.

In a bowl put croutons of hard French bread with mozzarella cheese on top and pour hot soup over and a little grated parmesan cheese,
