1 tbsp. vegetable oil
1 tsp. salt
1 seeded hot pepper, if desired

1 qt. vinegar
1 qt. water
3½ c. sugar
¼ tsp. alum

Directions:
Directions:
Wash and seed green or red peppers and cut into 4 pieces each to fit into the jars. To each clean sterile quart jar put the oil, salt and hot pepper (if desired).

Bring the vinegar, water, sugar and alum to a boil. Add the peppers and boil them in this mixture for 1 minute. Pack the peppers in the jars and cover them with the hot liquid and seal immediately.
