1 lb. hot and 1lb. mild cooked, drained sausage
12 eggs slightly beaten
4 cups milk
2 teaspoons kosher salt
2 teaspoon dry mustard
4 cups shredded cheddar cheese
4 slices day old bread
(if you only have fresh bread, lightly toast it just to make crusty)

Cook and drain sausage. Mix all ingredients. You can put into 2-9x13x2 pans, cover and rest overnight in the refrigerator or you can pour mix into a pitcher and store until morning then place in pans.
Once ready to cook, place in 350º preheated oven and bake at least 45 minutes. Sometimes this quiche takes up to an hour for the middle to cook thoroughly.

I don't remember a Christmas morning without quiche and it is requested year-round! This is really an anytime breakfast dish, but we have our traditions! Best served with fruit and french toast.
