1 c oil
3 eggs
2 c sugar
3 c flour
1/4 tsp baking powder
1 tsp salt and baking soda
3 tsp cinnamon and vanilla
2 c grated zucchini
(can add a bit of fresh grated nutmeg for extra flavour)
1 c raisins or nuts or chocolate chips optional

Directions:
Directions:
350 º F 1 1/4 to 1 1/2 hours. CO 300º F 1 hour.
32 muffins, bake 25 minutes.
Does not rise as high with whole wheat flour but still good.
Do not cut till cool.
Can use 1/2 c applesauce and decrease oil and sugar by 1/4 c each.
