2 Large Green Tomatoes, sliced 1/4-1/2" thick
1 egg
1/2 C Mile
1/2 C Cornmeal
1/2 C Flour
pinch Cayenne Pepper
1/2 tsp Garlic, granulated
1/4 tsp salt
Oil for frying

Directions:

Prepare skillet with oil, about 1" deep and heat on med-high heat.
In a bowl, whisk egg and milk well. In another bowl, mix dry ingredients using a fork. Dip sliced tomatoes in egg-milk wash, then into the dry mixture. Fry in hot oil on both sides until golden brown. Drain on paper towels, lightly salt and serve immediately.

This southern delicacy is a family favorite and usually only available in the summer when tomatoes can be found in their infancy state. Home grown are the best and any size will do. I prefer the thickness to be on the thinner side as this lessens the cooking time and will get the tomato to the slightly translucent state faster. Be sure to make a double batch My first batch usually never made it to the table! Which I took as a compliment!
