1 cup sugar
3/4 cup vegetable oil
1 cup purred pumpkin
1/4 milk
1 egg
1/2 tsp nutmeg
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 cup flour
sprinkling of brown sugar

Directions:

1. Mix sugar and oil
2. Add pumpkin
3. Combine flour and spices. Add to mixture and stir.
4. Add milk and egg.
5. Stir ingredients together.
6. Pour into muffin cups.
7. Sprinkle with brown sugar.
8. Bake at 350 - 375 degrees for 20 minutes.

* One 796ml can of E.D. Smith's Pure Pumpkin is enough for a triple recipe - which I always make because they disappear so fast!!*
