Grouper Filets 4 ea
Kosher salt 1 Tbsp
Black Pepper 2 tsp
Granulated Garlic 1 Tbsp
Spanish Paprika 1 Tbsp
Olive Oil 1/4 c

Sauce/Garnish:

Olive Oil 2 Tbsp
Onion minced 1/4 c
Garlic minced 1 Tbsp
White wine 2 Tbsp
Fresh Lime juice 1 Tbsp
Chipotle Peppers 2 ea
Heavy Cream 1/2 c
Diced avocado 1/2'' 1 ea
Diced Tomato 1/4'' dice 1/4 c
Red onion 1/4'' dice 1/4 c
Jalapeno minced 2 Tbsp
Cilantro minced 2 Tbsp
Fresh lime Juice 1 ea
Salt 2 tsp

Directions:
1. Season Grouper filets on all sides with salt, pepper, garlic and paprika.
2. Heat olive oil in large skillet on high heat. Sear Grouper filets about 4 minutes per side depending on thickness of filets. Set aside and keep warm.
3. In a medium saucepan combine heat olive oil on medium high heat. Add onion and garlic and sauté for 3 minutes. Add white wine reduce by 1/2. combine with chipotles and lime juice remove from heat and put in blender 'till smooth.
4. Mix diced tomato, onion, jalapeno, cilantro, lime, avocado and salt.
5. On serving plate top grouper with chipotle cream and avocado pico de gallo.
