7 Tbs soy sauce
4 Tbs creamy peanut butter
5 tsp rice vinegar
1/2 tsp cayenne pepper

3 Tbs olive oil
4 skinless boneless chicken breasts, cut into bite size pieces
3 Tbs minced garlic
1 1/2 Tbs chopped ginger (less if using dried)
3/4 cup chopped green onions
4 cups broccoli florets
1 green pepper
1 red pepper
1/2 cup dry roasted unsalted peanuts

1. In small bowl stir together soy sauce, peanut butter, rice vinegar, and cayenne pepper

2. Heat oil in wok over high heat. Add chicken, garlic, and ginger. Cook, stirring constantly, until chicken is golden, about 5 minutes.

3. Reduce heat to medium. Add green onion, broccoli, peppers, peanuts. Cook stirring 8-10 minutes. Add sauce last two minutes of cooking time. Serve over rice
