1 1/2 lb firm flesh fish (measure thickest part)
Rub with garlic olive oil. Salt and pepper
Sheet pan,
Dot with butter and sprinkle with sherry.
Scatter lemon wedges.

Directions:

Oven 400
Roast 10-12 min per inch of thickness. Should be opaque and pull apart.
Serve with roasted lemon wedges. Drizzle with good olive oil. Add parsley
