4 pork hocks
3 onions
3 garlic
2 lg carrots
2 celery
2 bay leaves
1/2 salt
pinch cayenne
10 cups water
2 Tlb worchestershire sauce
1 - 2 cups of quick cook lima beans

Directions:
Directions:
Put the hocks in the oven to cook slowly till browned. Then put them into the 10cups of water and simmer. When falling apart, strain and pick out bones and gristle. Add the bay leaves, 2 cups lima beans and continue to simmer as you add the chopped carrots, celery, onions, gariic, worchestershire sauce, and other spices.

Keith Smitham used to love this soup, way back when he and Maurice lived the powerhouse together (but he and Maurice were not good cooks)I asked his mom how she made it and this may not be exactly her recipe but it is what I remembered and wrote down. It is really good!
