3 c grated carrots
4 eggs
2 c sugar
1 c vegetable oil
tsp salt
2 c flour
1 tsp cinnamon
1 tsp vanilla
2 tsp baking soda

Optional:
1 c walnuts
1 c raisins
1 c coconut

Directions:
Directions:
Preheat oven to 350. Grease 9x13 pan or two 9 inch pans.

Mix the first 9 ingredients together -- do not beat!
Fold in the optional ingredients.

Bake for 40 minutes.
