10 lbs hamburger (I used ½ venison and ½ pork)
3T salt
2T sage
1Tnutmeg
1Tpepper
1tsp ginger
1T thyme
1T cayenne (optional) Was a nice lift but was nice without too
1pint ice water(if making patties don,t add the water)

Directions:
Directions:

Soak the sausage skins in half water and half vinegar. Rinse and use. Twist sausage one way and next time twist the other way. Mix spices in water then add to ground meat and mix.. The spices mix better that way. Be sure salt is dissolved and be sure meat is cold. Just above freezing
