Bread: 1 slice per serving (you can use any type of bread you like but the traditional choice is white)
Mashed Potatoes (real, instant, refrigerator - enough for your crowd)
3 lbs Ground Chuck
2 lg Eggs
1 med Onion, diced or 2 pkgs Dry Onion Soup Mix
2 cups Flour (approximately)
Salt and Pepper
3 cups Water (approximately) or 2 pkgs Brown Gravy Mix

In a bowl, mix hamburger, eggs, onion (or soup mix) and a couple of shakes of salt and pepper. You may find that his is one of those things easiest mixed with your hands. When meat is mixed well form it into patties. Put 1 to 1½ cups of flour in a shallow dish and add a couple of shakes of salt and pepper. Flour the hamburger patties and brown in a large skillet. You will not have room in a skillet to brown all at once so do them in shifts and as they finish, place them on a cookie sheet in the oven on a low temperature until you are ready for them. With all of the patties keeping warm, use the drippings from the skillet to make gravy. You can do this the easy way by using the brown gravy mix according to the directions on the packet or you can make it the old fashioned way by adding water to the meat drippings in the skillet and bring to a boil. Mix 3 Tbsp of flour to a cup of water. Mix well to reduce the lumps and add to skillet, stirring well and reducing to a simmer. While the gravy is simmering, add the burgers and continue to simmer for approximately 10 minutes. Now for that presentation! On each plate, place a slice of bread, a scoop of mashed potatoes, and a burger with gravy.

This longtime Franz family recipe depends, as many gourmet recipes do, on its presentation, so be sure to follow the serving directions given. The measurements given are approximate (as with all of Mom's recipies). The amounts given in these directions will make about 12 burgers.
