Ingredients: º 4 eggs
º 2 cups milk
º ½ cup sugar
º 1 teaspoon vanilla
º ¼ teaspoon salt

Directions:Preheat oven to 325º.
In a medium bowl lightly beat eggs. Boil milk in a separate ban. Allow to cool slightly. Stir in milk, sugar, vanilla, and salt with the eggs. Place one 1 quart casserole in a 13x9x2 inch baking pan on oven rack. Pour custard mixture into casserole.
Pour boiling water into the pan around casserole to a depth of 1”. (Baño de Maria)
Bake at 325º for 50 to 60 minutes or til a knife inserted near center comes out clean. Serve chilled.
Caramel syrup: Place 1 cup white sugar in small pan on a low heat til sugar is completely melted. Separately boil 1 cup water. Combine water and sugar still over low heat. Stir. It’ll be really sticky. Keep it on low heat for approximately 30 minutes or until the contents of the pan drop to 1 cup total. In other words, 1 cup sugar + 1 cup boiling water = 1 cup syrup.
Cool to room temperature then pour over custard. Serve chilled. |

Notes: It helps if when you pour the syrup on the custard you poke holes in custard to allow syrup to sink into the custard. Gives it a richer taste.
