Lentil and Rice Soup Recipe

2 c.dry lentils
1 c. brown rice (or c.brown rice and c.black, red or wild rice)
1 small onion (diced)
2 stalks celery (chopped)
several carrots (peeled and sliced in rounds)
⅛ tsp.thyme
⅛ tsp. pepper
1 or 2 bay leaves
salt to taste
12 oz. turkey kielbasa sausage (sliced into in. rounds)
7 to 8 cups water (add more if thinner soup desired)

Wash the lentils.
Wash and chop the onion and celery.
Wash, peel and slice carrots into rounds.
In a soup pot, add all ingredients.
Bring to a boil and simmer until rice is cooked (about an hour).
Remove bay leaf and serve.
