1 fryer chicken (cut up)
1 pound linguica (Portugese sausage), sliced into big chunks
1 bottle Heinz ketchup (16 oz.)
1/2 of the ketchup bottle filled with water
2 tsp. paprika
3 cloves of garlic
2 tsp. garlic powder
1/2 cup parsley (chopped)
Salt and pepper to taste
Dash of cinnamon (keep adding if needed)
1 onion ( chopped)
4 Yukon gold potatoes (cut into pieces)
3 carrots (coarsley chopped)

In a saucepan add the ketchup, water and spices. Cook until combined and very hot.
Wash and dry the whole chicken.
In a roasting pan, place the chicken, garlic cloves, onions, potatoes, carrots and the linguica in the pan.
In a 350º oven bake the chicken and sauce for 2 hours.

This is a recipe our grandmother and mom made for many years. Kim had the recipe and I may have tweaked it a bit but I think this recipe has captured the true essence of our Portuguese heritage and our wonderful comfort food.
