Ingredients:  
20 oz chopped frozen spinach, thaw and squeeze thoroughly to remove all liquid.
2 C bread crumbs; chopped coarsely
2 eggs; well beaten
½ C melted butter
1 tsp lemon juice
¾ C grated Parmesan cheese
1 tsp dried thyme
1 tsp dried rosemary
pinch dried sage
2 cloves minced garlic
8 minced shallots (or 1 medium onion)
salt pepper

Directions:

1. Mix all ingredients
2. Chill overnight to flavor
3. Preheat oven: 400º
4. Lightly grease a rimmed cookie sheet
5. Shape spinach mix into 1" balls
6. Place balls onto cookie sheet about 1.5" apart
7. Bake 15 minutes, till firm & golden
