1-16 oz sharp cheddar cheese
1- 8 oz pepper jack cheese
4 oz softened cream cheese
- cup mayonnaise
1 small jar pimentos, drained
S&P to taste

Directions:
Directions:
Shred and mix sharp and pepper jack cheese with cream cheese and mayonnaise until well blended but not mushy. Gently mix in drained a pimentos until they are blended throughout.

Bubba always "tweaked" this recipe just by looking at it whether it needed more cheese or other ingredients and tasting it.
And she always bought the cheese in blocks and always shredded it herself!
