3 beaten eggs
1 cup vegetable cooking oil
2 cups brown sugar
3 cups grated zucchini, packed
3 tsp. vanilla
cup heavy cream
1 tsp. soda
1 tsp. salt
tsp. baking powder
1 - 3 tsp. powdered cinnamon (to taste)
tsp. nutmeg

Directions:
Directions:
Combine all ingredients and mix well to a creamy texture. Bake at 350 F for about one hour in 2 loaf pans. Check at 50 minutes with toothpick. Cool on rack for easier cutting.
