º 4 chicken breasts
º ½ tsp. coarse salt
º 1 tsp. freshly ground black pepper
º 1 T. olive oil
º ¼ cup freshly squeezed lemon juice, about 2 lemons

Directions:
Directions:
1. Pound the chicken breasts to an even thickness of about ½”.
2. Pat the chicken breasts dry and season both sides with the salt and pepper.
3. In a large non-stick skillet, heat the oil over medium high heat. (If using a grill, omit this step and add chicken to grill).
4. Place the chicken in the pan and cook for 6 to 8 minutes, turning halfway through.
5. Turn off the heat and pour the lemon juice over the chicken and cover with a paper towel or piece of foil for 5-10 minutes. Serve.
