1 cup firmly packed Italian parsley (trimmed of thick stems)
5-6 cloves of garlic
2 Tbl. fresh cilantro
1/2 cup extra virgin olive oil
2 Tbl. fresh lemon juice
1 Tbl. sherry vinegar
1 tsp. Kosher salt
1/4 tsp. freshly ground pepper
1/4 tsp. red pepper flakes

Directions:

Finely chop the parsley by hand or in a food processor.
Add the cilantro and garlic and pulse to blend.
Place in a small bowl.
Stir in the olive oil, lemon juice, salt , peppers, lemon juice and sherry vinegar.
Adjust the seasonings to taste.
Refrigerate until ready to use.
