2 1/2 cup pastry flour
1/2 Tbl. sugar
5 1/3 oz. sweet butter (cold and cut into small cubes)
1/4 cup ice water (approximately)

Directions:
Directions:
Mix the dry ingredients together in a mixer with a paddle attachment.
Cut in the cold butter until the dough resembles coarse meal.
Add the water slowly until it just comes together.
Do not over mix or it will be very tough!
Refrigerate for at least one hour.
