Broccoli diced and blanched 2 qt
Salted boiling water 1 gal

Onion 1/4'' diced 2 c
Celery 1/4'' diced 1 c
Apple wood bacon 1/2 c
Butter Melted 1 1/2 c
Flour 1 c
Milk 3 c
Chicken Stock 3 c
Kosher Salt 1 1/2 Tbsp
Black Pepper 1 tsp
American Cheese 1 lb
Shredded Sharp Cheddar 1/2 lb

Directions:
1. Bring salted water to a boil and add broccoli. Boil for 4 min. Remove from heat and shock with cold water. Drain, allow to dry, and rough chop about 1/2'' pieces.
2. Brown bacon on medium high heat for five minutes. Add melted butter, onions and celery and sautee for 5 minutes while stirring.
3. Add flour and stir 3 more minutes. Add milk and chicken stock and bring to a simmer while stirring.
4. In blender combine 1/2 of the broccoli with onion, celery, milk, stock, salt and pepper. Blend 'till smooth.
5. Return to sauce pan and add remaining broccoli florettes and cheeses. Bring to a simmer and serve
