1½ LBS Beef Stew Meat 1 LG Onion – chopped 3 stalks Celery – chopped 1 bag baby Carrots 5 Potatoes – chopped 1 Tomato – chopped ½ C Ketchup Salt Pepper 1 Bay Leaf 2 TBS fresh Parsley Water
Brown Onion in Olive Oil. Add Meat and Salt / Pepper. Brown. Add Water to cover Meat plus ¼ inch Add: Tomato (can also use canned diced or stewed tomatoes instead) Celery Bay leaf Ketchup Cover and simmer for 2 hours. Add: Carrots Potatoes Parsley Simmer 45 minutes
