8oz spiral pasta or tri-color fusilli (cooked and drained)
1/2c olive oil
1/3c light so sauce
1/3c seasoned rice vinegar
1/4c toasted sesame seeds
1tsp sesame chili oil
3Tbsp sugar
2tsp fresh ginger root (grated)
3c cooked chicken, cubed
1/2c whole salted cashews
1/3c green onions, sliced
1/4c red bell pepper, sliced
6c fresh spinach, torn into small pieces

Directions:
Directions:
Prepare pasta following package directions. Drain and rinse in cold water. Place in large bowl. In small bowl, combine next eight ingredients and whisk well. Pour this dressing mixture over the pasta and toss well to coat. Add remaining ingredients and again toss well before serving.
