Vichyssoise- Cold potato, Leek soup Recipe

Leeks, white part only, chopped
4 tsp. butter
Stalk celery
1 can of Chicken broth
7 sliced potatoes, peeled and thin
1 pint heavy cream
chives
salt
white pepper

Directions:
Directions:
Melt the butter, add Chopped leeks let simmer for 5 minutes, add celery, potatoes and broth.
Bring to a boil, then reduce and simmer for 30-40 minutes.
Strain the chunks out. or puree the soup in a blender.
Return the soup to the pot, whisk in the cream, season with salt and pepper. Return to a boil, reduce to simmer and cook 5 minutes.

When room temperature, you may put in the refrigerator.

Serve cold with a sprig of chives
