4 Eggs
1 c. zucchini grated
c. butter melted
c. water
⅓ c. coconut flour
c. parmesan cheese grated
tsp. salt
tsp. baking powder
1 T. oregano
1 T. thyme
c. cheddar cheese (for the topping) grated

Preheat the oven to 400.
Whisk the eggs, butter and water.
Add the coconut flour, salt and baking powder and mix well.
Add in the zucchini, thyme and oregano.
Add in the Parmesan cheese and blend.
Put the mixture into muffin cups and sprinkle the grated cheddar cheese on top.
Bake for 13-15 minutes until golden on top and firm.
Eat and enjoy!
