º 4 medium lamb shanks
º 8 - 10 garlic cloves (crushed)
º 3 tomatoes cut in quarters
º 3 potatoes cut in quarters
º 2 carrots sliced thick
º Feta cheese crumbles
º 1 lime
º 1 T. oregano chopped
º 1 T. mint sliced
º Rosemary sprinkles
º Olive oil
º Salt and pepper to taste
º Garlic salt

Directions:
Directions:
Place carrots, potatoes and garlic in bottom of Dutch oven. Dribble 2 T. Of olive oil on veggies. Lay lamb shanks on top of veggies. Stack the onion and tomatoes around shanks. Add all spices and herbs at this time except for mint and feta cheese.

Bake at 300º for 2 hours or until lamb falls off the bone.

Top with mint and feta.
