1 1/2 cups sweet butter (softened)
3/4 cup powdered sugar
3 cups unbleached AP flour

Filling:
3 cups sugar
6 large eggs
1/2 cup fresh lemon juice
1/2 Tbl. lemon zest (grated)
1/2 Tbl. pure lemon extract
3/4 tsp. baking powder
1/3 cup unbleached AP flour

Crust:
Preheat the oven to 350 degreesº
Grease a 1/2 baking sheet pan with pan coating or melted butter.
In a large bowl mix together the butter and powdered sugar. Gradually beat in the flour.
Continue to mx the dough until it starts to form a ball.
Press the dough into the prepared sheet pan.
Bake for 12-17 minutes until it is slightly brown.
Let cool for 10 minutes before putting on the topping.

Filling:
On low speed mix the eggs, sugar, lemon juice, zest and extract. in a separate bowl, mix the baking powder and flour.
Add to the egg mixture and combine well. Pour over the baked crust.
Bake at 325º for another 25 minutes or until slightly set.
Cool thoroughly.
Cut into slices and sprinkle with powdered sugar.

This is a great citrus bar and you can substitute the lemon for any other citrus fruit.
I like to put a fresh raspberry on each piece when they are in season.
It is great for a picnic dessert.
