2 cups chow mein noodles
6 - 8 oz chicken breasts, boned and skin removed.
Soy Sauce
4 Tablespoons butter
4 Tablespoons cooking oil
2 heads iceberg lettuce, shredded as fine as possible
2 Tablespoons peanut oil
2 Tablespoons vinegar
Mayonnaise
Chopped Parsley

Sesame Dressing:
1/4 cup sesame seeds, lightly browned in oven
2/3 cup salad oil
2 Tablespoons lemon juice
2 Tablespoons vinegar
2 Tablespoons sugar
1 clove garlic, crushed
1 1/2 teaspoons salt

Salad:
Marinate chicken breasts in soy sauce for 20 minutes, then saute in butter and cooling oil, 7 minues on each side. Keep warm.

Cut chicken into thin strips and toss with shredded lettuce, soy sauce, peanut oil, vinegar and noodles. Add mayonnaise to blend and season to taste. Garnish with chopped parsley and dress with Sesame Dressing. Surround with snow peas.

Sesame Dressing:
Mix all ingredients in blender. Add sesame seeds later. If chicken is cooked ahead of time, keep at room temperature.
