1 ½ lbs. veal or chicken scalloping
flour
3 T. olive oil
¼ lb. prosciutto, cut into strips
½ lb. fresh mushrooms, sliced
2 T. butter
½ c. dry Marsala wine

Directions:
Directions:
Dredge the meat in the flour and shake off excess. Heat the olive oil in a large skillet over medium heat and sauté each side for 45 seconds. Cook in batches, adding more oil if needed. Add the prosciutto, mushrooms and butter to the pan and sauté for 5 minutes. Add the Marsala and bring to a boil. Reduce by ⅓ and add the veal and let simmer on low for 5 minutes.
