1 leek, white part only, sliced
1 large carrot, diced or sliced into rounds
1 c green bean, cut into 1" chunks
1 can (15 oz) white beans, rinsed
6 c vegetable broth
salt and pepper
1 handful of fresh basil, chopped
1 tbsp olive oil
Parmesan cheese (optional)

Directions:
Directions:
Heat olive oil in Dutch oven or stock pot on medium, add sliced leeks, salt and pepper, and basil. Saute for 5 minutes. Add carrots and green beans. Saute for 10 minutes. Increase heat, add rinsed white beans and broth; bring to a boil. Reduce heat and simmer for 15-20 minutes. Heat off. Let sit for 10 minutes and then serve with Parmesan.
