Ingredients:  
Ingredients:  
1 cup quinoa (I like a mix of ½ cup red and ½ cup white)
2 cups chicken broth/water
Juice and zest of 1 lemon
1 tsp olive oil
Salt/pepper/cayenne (season to your taste)
1 handful of cilantro/dill - pick your herb
½ onion finely chopped
1 can of black beans
1 avocado chopped (spritz with lemon juice to prevent browning)

Directions:

1. Wash quinoa and cook according to instructions on package
2. Let quinoa cool
3. Wash black beans
4. In a large bowl, combine black beans, lemon juice, lemon zest, avocado, cayenne, pepper, olive oil, cilantro/dill, quinoa, salt and pepper to taste, and serve!
