Allie's Beef Stick Recipe

Beef Sticks:
2 lb lean ground beef
2 Tablespoons tender quick salt (curing salt) NO SUBSTITUTIONS
1/4 teaspoon onion powder
1/2 teaspoon garlic salt
1 1/2 teaspoons liquid smoke
1 teaspoon mustard seed
1 cup water
2 teaspoons coarse ground pepper
1 Tablespoon (scant) regular black pepper

Mustard Sauce:
1/2 cup sugar
2 1/2 Tablespoons dried mustard
1/2 teaspoon cornstarch
1/4 teaspoon salt
1 egg yolk
1/2 cup half and half
1/4 cup cider vinegar

Beef Stick:
Mix all ingredients well. Roll into 3 rolls the size of a silver dollar. Wrap air tight in foil. Refrigerate for 24 hours. Remove foil and place on broiler pan and cook for 1 hour at 300. May be frozen.

Mustard Sauce:
Combine first 4 ingredients in heavy pan. Mix egg yolk and half & half well. Gradually stir into dry ingredients. Cook over medium heat until thick. Add vinegar and mix well. Store in refrigerator.
