1 small-medium head of red cabbage (about 1 pound)
6 tablespoons sweet chili sauce
1/4 cup rice vinegar
4 scallions/green onions

Directions:
Directions:
Thinly slice the green onions. Separate the white bottoms and green tops. Core and thinly slice and chop the cabbage.

Combine white onion bottoms, sliced/chopped cabbed, sweet chili sauce, and vinegar. Season with salt and pepper to taste. Stir to combine. Set aside to marinate at least 10 minutes before eating.
