3 cups thinly sliced zucchini (about 4 small zucchini)
1 c. Bisquick mix
½ c. onion, finely chopped
½ c. grated parmesan cheese
2 T. fresh parsley, chopped
½ tsp. salt
½ tsp. oregano
Freshly ground pepper to taste
1 clove garlic, minced
½ c. oil
4 eggs, beaten

Directions:
Directions:
Preheat oven to 450º. Grease a 13x9 baking dish. Combine all of the ingredients and spread in the pan. Bake until golden brown, about 25 minutes. Cut into 2x2 inch squares and serve.

Makes about 24 squares.
