1 egg
1/2 tsp salt
2 tbsp. milk
1 cup all purpose flour

Ina mixing bowl, beat the egg. Stir in milk and salt. Add enough flour ro make a very stiff dough. Turn out on a floured surface. Roll dough very thin. Let dough rest 20-60 minutes.

Cut dough into 4 pieces. Stack each piece on top of each other- place flour between layers so they do not stick together. Roll the pieces into a long roll. Slice thin- spreading out loose noodles so they can dry.

Dry noodles for at lease 2 hours before using. Can be place in air-tight container or ziplock bag and freeze until use.

TO COOK: Place dry noodles into boiling broth slowly and stir carefully to not break up the noodles and prevent scorching. Cook for 8-10 minutes or until tender.
