6 slices Bacon, crumbled
1 tbsp Butter
1 tbsp Olive Oil
6 Boneless, Skinless Chicken Breasts
1 Onion, Chopped
3 Cloves Garlic, Minced
½ tsp Salt
⅛ tsp Pepper
1½ cups Shredded Cheddar/Colby Jack Cheese

Directions:

Cook bacon in skillet. Crumble and set aside. Pour grease out, but don't wash. Add butter and oil. Sauté chicken over medium heat, turning once until chicken is almost cooked. Place chicken in uncreased 12x8 dish.

Cook onion and garlic in drippings remaining in skillet. Cook until onion is softened, then stir win salt, pepper, and cooked bacon. Spoon over chicken and sprinkle with cheese.

Bake at 350º for 10-15 minutes.
