5 to 6 potatoes
4 boiled eggs, chopped.
1 medium onion, diced
1 c diced icicle pickles, diced (may use pickle relish or Mt. Olive sweet petite pickles)
Duke's mayo
1 tsp yellow mustard
Pickle Juice
Salt
Pepper.

This recipe is also made to scale & to taste. There is really no way to give you accurate measurements as daddy just mixed it to the taste & texture he thought was best. There is a lot of tasting that goes along with this to make sure you got it just right.

Peel potatoes, cut to medium bites and boil until done (make sure they don't get TOO done). Drain & place in large bowl. Using potato masher, mashed to desired consistency, leaving a few small chunks. Fold in onions, eggs, pickles, mustard & salt & pepper to taste. Stir well. Begin adding mayo to desired consistency. Add pickle juice stirring in until desired taste. This also give it some moisture & thins it out a bit.
