1 chicken -4.5-5 lbs
6 lemons
a poultry mix of rosemary, sage, thyme, parsley, oregano

Marinade:

1 cup dijon
½ cup soy sauce
½ cup fresh lemon juice- don't discard lemons

Directions:

Make marinade - whisk all ingredients

1. Preheat oven to 425ºF
2. Clean chicken and pat dry. Place chicken in a baking dish.
3. Stuff cavity with lemon rinds and fresh herbs.
4. Pour marinade over chicken and add cracked pepper.
5. Cover with foil. Bake for 1.5-2 hours, basting often until thermometer reads 180º.
