1/4 cup flour
1/2 tsp salt
1/2 tsp dried oregano
1/2 tsp pepper
4 boneless skinless chicken breasts (pounded to 1/4 inch thickness)
4 Tbsp butter
2 Tbsp Olive Oil
1 cup sliced mushrooms (optional)
1/2 cup Marsala wine
1/4 cup cooking sherry

Directions:

In a bowl mix flour, salt, pepper, oregano. Dredge each chicken breast in the flour mixture until nicely coated.

In a frying pan melt your butter and oil over medium heat, add the chicken breasts and cooked for 5 minutes each side.

Add the mushrooms and then both cooking sherry and Marsala wines.

Cover the pan and cook for 10 minutes turning once after 5 min.

I used to make this for you when you were little, i would serve it with Broccoli and rice or a baked potato. I had to cut it up into little pieces for you, but you always ate all your chicken, sometimes not your broccoli :-)
