Chocolate Cream Cheese Buttercream Frosting

Butter and flour for coating and dusting the cake pan
3 c. all-purpose flour
3 c. granulated sugar
1½ c. unsweetened cocoa powder
1 T. baking soda
1½ tsp. baking powder
1½ tsp. salt
4 large eggs
1½ c. buttermilk
1½ c. warm water
½ c. vegetable oil
2 tsp. vanilla extract

Preheat oven to 350º. Butter three 9-inch cake pans. Dust with flour and shake out the excess flour. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on medium speed until smooth (2 minutes). Divide batter evenly into the pans. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean. Cool on wire racks for 15 minutes and then turn cakes out onto the racks. Allow to cool completely. Frost with your favorite icing.
 

Chocolate Cream Cheese Buttercream Frosting

1½ c. butter, softened
8 oz. cream cheese, softened
1½ c. unsweetened cocoa powder
3 tsp. vanilla extract
7-8 c. powdered sugar
About ¼ c. milk (as needed)

In a large bowl, beat together the butter and cream cheese until fluffy. Add the cocoa powder and vanilla extract. Beat until combined. Beat in powdered sugar, 1 cup at a time. Add milk as needed until frosting gets to a spreadable consistency. Frosting will be thick and will thicken more if refrigerated.
