3 large eggs, room temperature
2 c. granulated sugar
3/4 c. (6 oz) unsalted butter, room temperature
1 tsp. vanilla extract
1/4 tsp. salt
Zest of one orange
2 c. all-purpose flour
12 oz. fresh cranberries, washed and rinsed

Preheat oven to 350º. Using a stand mixer with the whisk attachment, combine the eggs and sugar. Whip until the eggs have turned a pale yellow and the mixture has thickened and more than doubled in volume, about 3-5 minutes. Add softened butter, vanilla, salt, and orange zest until incorporated. Using a spatula, stir in the flour. Stir in the cranberries, just until mixed. Spray non-stick cooking spray into a 9x13 baking dish. Pour the mixture into the dish. Bake for 45-50 minutes, until browned on top and a toothpick stuck in the middle of the cakes comes out clean. Cut into squares. Store leftovers in the refrigerator.
