Four slices of bacon, cut in bits
One onion, diced
One cauliflower, small pieces
1/2 teaspoon Cajun spice
1/2 teaspoon pepper
2 quarts chicken broth
1/2 stick butter
1/4 cup flour
2 cups milk
One cup half and half
1/4 cup sour cream
3 cups cheese
2 tablespoons parsley
Salt to taste

Fry bacon until crispy. Drain and pour out grease. Add onion, sauté three minutes. Add cauliflower, cajun spice and pepper. Cook 3 to 4 minutes. Add chicken broth, simmer 15 minutes. Smash 1/2 of cauliflower in pot. Melt butter and whisk in the flour, add milk, cook until thickened.
Remove from heat, add half and half. Pour into soup. Boil 3 to 5 minutes. On low heat add sour cream and cheese until melted. Stir in parsley. Serve with sprinkles a bacon and salt-and-pepper if needed.
